Eggs in a Basket, Eggies and Toast...or whatever...?

I've become a huge breakfast buff...and recently cereal is just not cutting it for me.  I've been racking my brain for something not necessarily out of the ordinary, but something that I don't make often, or a spin on an old favorite.  While recently revisiting a movie favorite of mine ("V for Vendetta"), I came across the scene where V is preparing Eggs and Toast, together.  I thought to myself, that was just the thing!  It's quick, it's easy, and it doesn't interrupt my morning.

FYI, this whole process of trying to make this the first few times was purely trial and error.  If you heed to my instructions, you should be able to make a perfect batch of these for yourself.  Here is what you'll need:
  • Two Slices of your favorite bread.
  • Butter or Margarine spread.
  • Two Eggs
  • PAM to coat your skillet.
The first step is to butter the bread.  Make sure to butter both sides before frying, or it just won't work.  Once you've buttered your bread, take the PAM spray and coat the inside of your skillet generously, and turn your burner on medium heat for about 3 minutes.  Once your pan is heated, toss in the bread and let it sit on one side for aprox. 1 and a half minutes.  Flip the bread with a spatula.

Step two: take any cup with a circular top and cut a whole in the bread.  Make sure to press down and apply pressure for this to cut all the way through.  Leave the cutout inside the bread for another minute or so, and then remove it to your serving plate (you have to save it for an added bonus, that is, if you like your yolk runny!).

The third step is to take your two eggs, crack them, and apply them into the cut-out center of the bread.  You don't have to do your eggs sunny-side up or over-easy, you can also do scrambled, too.  Season your eggs with salt and pepper if you like, and flip bread if necessary (I like mine overeasy).

The final step, is once the eggs have cooked your liking, remove from heat, place on your serving plate with your bread cut-outs, and ENJOY!  This breakfast is simple and easy, and doesn't require too much time from your morning routine to prepare.  Fry it up with some bacon or sausage, too, if you require a little more fuel for your mornings.

Enjoy this recipe?  Do something different with it?  Make sure to pass along your critique on this easy recipe to friends and family, Share it on Facebook or Twitter if they are looking for something a little different for a quick breakfast.  It's one of those things I've been hinging my mornings on these past few months, and it hasn't failed me yet.

Be sure to check the blog often this summer.  Even though it's hot outside, and we'll probably be attending hundred's of BBQ's and events, we're still poised to continue bringing content all summer long.

Eat On,

JG
