Insanely Moist Banana Bread

I love buying bananas at the market, just for the simple thought of knowing that at least those few bananas I don't eat through that week will make something of themselves. To be honest, the 6 bananas in this recipe really outdid themselves...I'll reveal to you how with this interesting recipe for banana bread. Here are the ingredients:



-2 cups sugar
-1 cup butter
-6 bananas, ripe (browned peel)
-2 tbsp's of mayo (yes, mayo)
-3 cups flour
-2 eggs
-1 tsp salt
-1 tsp baking soda
-1/2 tsp baking powder
-1 cup of chocolate chips (optional)
-1 tsp vanilla extract (optional)

First, preheat your over to 350 degrees, and grease a bread pan (5 by 9) pan generously. Now I have made some adaptations to this recipe by first taking shortening out of the mix, and using butter instead--you can do or use whichever you prefer. Second, take the sugar and butter mixture and cream the two of them together using a wisk or mixer. Do not microwave the butter, as it will cook the egg enough to make the batter much more dense than it should be.

After creaming the butter and sugar, on a separate bowl, mash the bananas and add in the 2 tbsp of mayo and eggs (separately), until all blended well. Add this concoction to your buttery mixture, and again stir out all lumps with a whisk or a mixer.

Lastly, add the remainder of your dry ingredients together in a separate bowl. Once mixed together, slowly pour dry mixture into banana mixture just bit by bit, this way you have no dry spots in your mixture. Feel free to again use a whisk or mixer for this task. Once blended to your liking, add chocolate chips, or walnuts, and mic again quickly if you like.

Finally, pour mix into the pre-greased pan and pop the pan in your oven from anywhere from 50 to 75 minutes, or until you can test the bread with a toothpick and it comes out clean.
