TWO WORLDS COLLIDE! (sweet and spicy stuffed peppers)
Before I begin. I must give a shout out to JACKS LINKS for creating the tastiest sweet and spicy beef jerky around.
The idea suddenly came into my mind while I was half way into a bag of JACKS LINKS. Each bite gave me the best of both worlds. So why not incorporate the sweet and spicy idea with one of my personal favorite type of meals to make. STUFFED PEPPERS!
let's start out with the ingredients;
- 1 boneless chicken breast.
- 8 sweet peppers. (snack size)
- 1 cup of chopped mushrooms.
- 1 cup of chopped sugar snap peas.
- 2 table spoons of Mrs Dash seasoning blend.
- Sriracha Hot Chili sauce.
- Thousand Island Dressing
- Two table spoons of olive oil
First start with the chicken. Season the chicken with the two table spoons of Mrs Dash seasoning blend and cook the chicken in a pan with one table spoon of olive oil.
While the chicken is sizzling in the pan. start cutting the peppers open with a small half inch slit from the top to the bottom and clean and gut them.
After the chicken is cooked, start to shred it. The easiest way is by taking a fork and start to scrape. After the chicken is shredded, mix the chopped sugar snap peas and chopped mushrooms with the chicken. Start cooking the mixture in a frying pan with the last table spoon of olive oil and start to mix it with the Sriracha Hot Chili Sauce. Season to your liking because the chili Sauce has quite a kick.
When the mushrooms start to darken that's when the last steps are ready. Dump the mixture in some type of bowl or container. Now mix enough thousand island dressing to somewhat make the mixture a thick paste.
Last, start to stuff the peppers with the sweet and spicy concoction and enjoy!
This recipe is perfect for a nice movie snack or for appetizing a small group for a get together. the estimated time for preparation and cooking is about a half hour
With every bite of these stuffed peppers you and your friends will experience two distinct flavors of sweet and spicy.. or like I said before,
"the best of both worlds".
