Low Sodium Sweet and Sour Chicken

                                                                                                                                                                           

Who else has procrastinated on eating healthy for the year 2013?  Well, the cold weather is almost over and the time to get in shape is running out. So lets get started on what you'll need to make some healthy sweet and sour chicken that tastes like it was fresh from the local Chinese Restaurant.  It will keep you in line with your goal of losing weight, and it's a heart healthy alternative to ordering out. Here's what you'll need:






Chicken Coating:
> 3-4 boneless chicken breasts
> 1 cup of cornstarch
> 2 eggs, beaten
> 1/4 cup of vegetable oil

Sweet and Sour Sauce:
> 3/4 cup of sugar 
> 4 tbs low sodium ketchup
> 1/2 cup of distilled white vinegar
> 1 tbs of low sodium soy sauce 
> 1 tbs of garlic salt

Preheat your oven to 325 degrees. Then cut your chicken into small strips or cubes. After the chicken is cut and washed, coat the chunks in the corn starch the dip them into the eggs. Heat your oil in a skillet and start to cook the chicken until its somewhat browned, but DO NOT cook them all the way through. When they are browned lightly, place the chicken on a baking sheet. Mix all the sweet and sour sauce ingredients into a bowl and pour over the chicken. Bake the chicken and flip them every 15 minutes for about 45 minutes to 1 hour.

This meal is very simple to make and most of the ingredients are more than likely already in your kitchen. It also tastes like you'd be cheating on your diet, but trust me, you're not.
